Recipe: Austrian garlic soup

Quick, easy, and absolutely delicious Austrian garlic soup.

Ingredients:
– 50 g butter
– 10 fat cloves of garlic, peeled and crushed
– 25 g flour
– 250 ml milk
– 500 ml stock (vegetable or chicken)
– 2 tbsp white wine
– salt & freshly ground black pepper
– bunch of parsley, chopped
– toast/croutons

Recipe:
– Melt the butter in a saucepan
– When it’s foaming, add the garlic and season with plenty of salt and pepper
– Cook over low-medium heat until the garlic smells more intense and starts to seperate from the butter. Stir this continuously to prevent the garlic from burning
– Add the flour and stir for a few minutes to cook the raw flavour out
– Add the milk bit by bit, and then the stock bit by bit, stirring constantly
– By the time all the liquid is in the pot, then add the wine and simmer for about 10 minutes to mellow the garlic
– Stir the parsley into the soup
– Serve with toast or croutons
