A lovely MiddleEastern dish, super easy to make, just takes a little time.
Ingredients:
- 200 g black lentils (aka beluga lentils)
- 1 liter water
- olive oil
- 2 large yellow onions, peeled, roughly chopped
- salt & freshly ground black pepper
- 200 g rice, soaked for ~15 minutes and then drained
- ground cumin
- fried onion bits
Recipe:
- Boil the lentils in half a liter of water, for about 10 minutes
- Drain the lentils, and put aside
- Add some oil to a big pan, on medium heat, and fry the onions ’till they’re dark-golden brown. This WILL take some time, and a lot of stirring so they don’t burn
- When the onions are brown, add half a liter of water, and bring to a boil for about 2 minutes
- Add the rice and lentils, along with 1 tsp ground cumin, salt, and pepper
- Turn the heat to low, cover the pan, and gently simmer for 15-20 minutes until both the lentils and rice are done
- Stir through the mixture once or twice, then cover and leave to stand for another 10 minutes
- Serve topped with crispy onions
