A lovely spiced lentil soup, mildly spicy, but very filling and healthy!
Ingredients:
- 2 tbsp oil
- 1 tsp cumin seeds, whole
- 1 small onion, roughly chopped
- 4 cloves of garlic, peeled, crushed
- 0,5″ slice of ginger, peeled and grated
- 200 g red lentils (yellow is also fine, but harder to find)
- hand full of frozen spinach
- 0,25 tsp chili powder
- 1 tsp turmeric
- 1 tsp Garam Masala
- 2 tsp ground coriander
- salt & freshly ground pepper
- 1,5 l vegetable stock
- 3 tbsp fresh lemon juice
- 1 bunch of koriander, leaves roughly chopped, stems finely chopped, separated
Recipe:
- Heat the oil on a medium-high heat
- Add the cumin seeds, stirring them well through the oil, and when they start to crack, add the onion, along with some salt and pepper
- Fry until the onion starts to get glassy/translucent, stirring regularly
- Add the garlic, ginger, and the coriander stems, frying for ~2 minutes
- Add the chili, turmeric, Garam Masala, ground coriander, and stir well for a minute so everything becomes nice and fragrant
- Add the lentils, spinach, stock, bring to a boil and stir well so the lentils don’t burn at the bottom of the pan
- Turn down the heat and simmer gently for 15-20 minutes until the lentils are nice and tender
- Add the lemon juice, some salt and pepper, the coriander leaves, and test for taste

If it needs something extra but not salt, add more Garam Masala
